My recipes – Courgette cake

Servings: 4-8

Ingredients:

    • 1 courgette (=zucchini)
    • 100g of grated emmental (you could try with cheddar instead)
    • 150g of flour
    • 1 packet of baking powder (10g)
    • 3 tbsp of vegetable oil
    • 3 eggs
    • 125 mL of warm milk
    • My spices & herbs choice:
      • 1/4 tsp of ground nutmeg
      • 1/2 tsp of ground black pepper
      • 1/4 tsp of cayenne pepper

Cooking instructions:

Pre-heat your oven: 200°C.

In a bowl, mix the flour, the baking powder and the spices. Add the oil, the milk and the eggs.

Slice the courgette as you wish. I like thin slices as it will allow you to have courgette in each mouthful. Add the cheese and the courgette to the mix.

Pour the mix in a baking dish after making sure it won’t stick (non-stick dish or coated dish).

Bake for 40 minutes in the oven.

Once the cake is fully cooked, you can serve it hot or cold.

Notes:

  • It can be serve with a mixed salad on the side.
  • If you are vegan, you can replace the cheese or remove it fully.
