Preparation: 10 minutes
Cooking: 30 minutes
Servings: 4-6

Ingredients:

    • 600g of carrots
    • 300g of potatoes (one big potatoe)
    • 2 tbsp of vegetable oil
    • 2 chicken stock cubes
    • 1.5 L of water
    • Spices & herbs:
      • 1 big onion
      • 1 tsp of ground black pepper
      • salt to taste
      • any herbs you like; I would suggest cayenne pepper.

Cooking instructions:

Dice the potatoe and slice the carrots. Slice the onion.

In a big pot, heat up the oil on medium heat. Add the onion. Cover and cook for 5 minutes or until the onion is soft.

Dissolve the stock cubes in the hot water. Add the sliced carrots and the diced potatoe in the big pot.

Add the hot stock. Increase the heat to high and bring to a boil.

Add the spices, cover and cook until you can crush the vegetables easily with a fork.

Blend.

Serve.

Notes:

  • It can be serve with crispy cheesy bread.
  • If you would like to add some meat to this recipe. I suggest that you add bacon or grated cheese when you serve the soup.
